Shun Classic
Shun Classics are the original Shuns, the first Japanese-style knives to be made available to a wider audience in North America. Instead of heavy ponderous blades, Shun Classic blades are lighter with razor-sharp edges and crafted from advanced steel. Rather than weighty, Western handles, Shun Classic offers the graceful control of a traditional Japanese handle.

Pakkawood Handle
These traditional Japanese-style handles have a slight ridge on the right side, which fits into the curl of the fingers for a comfortable and secure grip. Viewed end-on, the shape resembles the capital letter "D". Pakkawood is waterproof, incredibly durable, and won't harbor bacteria.
Shun is Different
If you've never owned a Japanese knife before, you'll immediately notice how different a Shun feels in the hand. Shun is harder, lighter, and sharper. Sharpened to a steeper angle (16 degrees) with an edge that will hold longer, the Classic line is designed to cut in a smooth, slicing motion.
Layered Steel
Shun proprietary VG-MAX cutting core is a high-end "super steel" that is extremely hard, enabling Shun Classic knives to take an incredible edge and hold it longer.
Stainless Damascus Cladding is made of 34 layers of stainless steel on each side of the blade, for a total of 69 layers. Classic's cladding supports the cutting core, adds stain and corrosion resistance, and looks elegant.

Shun knives, made in Japan by KAI (Kershaw Cutlery), are quite possibly the sharpest knives on the market. The acute 16 degree angle of Shun edges won't bend or waver due to the hardness of the VG-10 steel core used in their construction. Clad with 32 layers of high-carbon stainless steel (16 on each side), the blades resist rusting and maintain their razor edge for a considerable time. The handles are made of a resin and hardwood fusion known as PakkaWood, and form a "D" or slight tear-drop profile with a side ridge that most comfortably fits a right-handed user. The packaging is nice, light cardboard but an item I can't really describe other than a placement holder. Since I just bought one knife this time, I received just one box.
The knife is light but in no way feels cheap. I started just trying it out, slicing tomatoes and a few other vegetables. It's not worth posting pictures but the thinness I was able to slice these things to was just shocking. It took virtually no pressure, you just place the blade on the item and move it back and forth.
I moved on to trying to cut some beef for stir fry. Again, just like the vegetables it was extremely easy and you could cut things with a precision I haven't experienced before. Then I moved on to sandwiches, first just using a standard two slices of bread sandwich and then a Sub.
It was pricey, but I'm sold and as a verified purchase, you'll see several more in the near future if you doubt my sincerity - I have to get them all. They're definitely an investment and you need to be careful with them, you could really hurt yourself if you weren't careful but that's the case with any knife.. If there was 10 stars, I'd give it to the Shun. With that said, I haven't tried a Wusthof yet and even though I'm in love with the Shun, I think I'm going to buy one just for good measure. I'll post a review of it when I do and update this one although I have a feeling I'm already too in love with this product to really want to change.
After 5 months it's still very sharp without any sharpening and I use it a lot. This is a great knife for cutting everything from tomatoes and other vegetables to smaller size loaves of bread. It's my "sandwich making knife". The rounded tip makes it easy to reach into a jar of mayo, mustard or jam and the nice wide blade is perfect for spreading things on bread. It's also great for spreading pizza sauce or making wraps and then cutting them into sections. If you like to make sushi rolls it's great for spreading the sticky rice and for cutting them after you've rolled them up. (Rinse off the rice, of course) It makes a nice clean cut without mashing the roll or disturbing the contents.
Is this a "must have" knife? No, I could get by with my other Shun knives but it a very handy one and it sure gets a lot of use around here.
For anyone considering moving up to higher end knives like Shun, this is a good place to start...if you decide not to invest in a full set of great knives, this is unique enough that you won't be displacing some similar knife from another manufacturer...if you do decide to expand and acquire more traditional pieces in the Shun Classic series, the overall utility of this knife will round out any complete set nicely.
I have actually thrown out most of
our knives because of this versatile guy we simply do not use it them anymore. It is a medium weight, and holds it edge for ever!!!! Be careful he is deceptivly sharp!!! I have a knife sleeve for mine. The handle is wood so don't put it in the dishwasher, or set it in water for any length of time. It is easily cleaned and hand dried. Well worth the money, and also makes a great gift.

Excellent build quality Japanese knife. I mostly use it for paring roasted duck or turkey. Way much better than the Miyabi utility knife (which is also really good) I used to use. It is a perfect size knife for me to handle the birds.
